Crock Pot Chicken



4-6 boneless, skinless chicken breasts
1 can Rotel
1 package taco seasoning mix
*jalepenos, green chilis, onions...whatever your little heart desires.

Throw all ingredients in a crockpot.  Cook 6-8 hours on low.  (If cooking longer or crockpot cooks fast you may need to add a little water.)  One hour prior to serving, shred chicken with two forks then mix and let sit for an hour.

Use chicken to make chicken tacos, nachos, chimichangas...whatever! 

*I have been told that you can even use frozen chicken breasts but I haven't tried, so I am not 100% sure!
