Colorado Chimichangas

1 - 1 1/2 pounds ground turkey
1 package taco seasoning
1 teaspoon ground cumin
2 teaspoons chopped fresh oregano
2 tablespoons chopped fresh cilantro
2 4-ounce cans green chiles
1/2 cup salsa
2 green onions
1/2 cup low-fat sour cream
1/2 cup shredded Cheddar cheese
4 tablespoons butter
10 fajita-size flour tortillas
1/2 cup shredded Cheddar cheese

Garnishes (Optional):
1 cup chopped tomatoes
1 1/2 cups shredded lettuce
1 cup shredded cheese
1 cup guacamole
1 cup salsa
1 cup sour cream

Directions:
Preheat oven to 450 degrees.
Cook turkey with taco seasoning according to directions on seasoning packet.
Add cumin, oregano, cilantro, chiles, salsa, green onions, sour cream, and 1/2 cup Cheddar cheese.
Melt butter in a microwave.
Warm stack of tortillas in microwave for 30 - 45 seconds.
Lay tortillas on wax paper and brush both sides with melted butter.
Spoon 1/3 cup filling into center of each tortilla and fold envelope style. Place tortillas, seam-side down, in a greased 9x13-inch pan.
Bake for 20-25 minutes or until golden brown.
Sprinkle with cheese and return to oven to melt cheese.
Serve with garnishes as desired.

  1. Dan would DIE if I used ground turkey...so I think I will just use hamburger. Sounds so good! -Jess
